We used a purified capsaicin elixer to dial in spiciness to perfection. Capsaicin is the active compound found in chili peppers that gives them their characteristic heat. It is scientifically known as 8-methyl-N-vanillyl-6-nonenamide and is primarily responsible for the pungency of hot peppers. Capsaicin has various medicinal properties, including its use in topical creams for pain relief, as it works by depleting substance P, a neurotransmitter that sends pain signals to the brain. Then, the SUPER SPECIAL cacao from Jamaica: Dark profile; heavy chocolate base with slight biscuit and dark fruit notes followed by spicy, earthy, green and oak wood notes. This all is so serious. We took the edge off with marshmallows and Mexican Vanilla. Dark muscovado sugar gives the cacao extra depth and helps carry the spiciness.
